At Candia Cellars, every bottle begins with intention. Our Sauvignon Blanc from Chalk Hill is not just a wine—it is the result of careful vineyard selection, thoughtful winemaking, and a deep respect for the craft. The 2025 Candia Cellars Sauvignon Blanc from Chalk Hill AVA showcases the balance between vibrant fruit, elegant texture, and thoughtful winemaking.

This wine begins in the beautiful hills of Chalk Hill, Sonoma County. For our inaugural Sauvignon Blanc, we developed a meaningful business relationship with Notre Vue Vineyards, a stunning estate known for producing exceptional fruit.

Before harvest, we made several site visits to the vineyard to walk the blocks, evaluate the vines, and monitor the grapes as they approached optimal ripeness. These visits allowed us to understand the character of the vineyard and ensure the fruit met the quality and flavor profile we envisioned for Candia Cellars.

The grapes were hand-harvested and fermented in French oak barrels, a winemaking approach that enhances complexity while preserving the fresh aromatics that Sauvignon Blanc is known for. During aging, we used bâtonnage (lees stirring) to build texture, richness, and balance.

At Candia Cellars, attention to detail extends beyond the wine itself. We carefully designed our Candia Cellars label and packaging, selecting materials that reflect the craftsmanship and elegance behind every bottle.

The result is a Sonoma County Sauvignon Blanc that expresses the unique terroir of Chalk Hill—bright, layered, and beautifully balanced.
